The skillet is amazing to use! Does everything you state it’s supposed to do! I did a gorgeous bone-in ribeye the other evening! Wow! Perfect crust and cooked evenly throughout! My “Perplexed” comes from your definition of sizing! I did the tour of several cooking supply stores over the weekend; they all measure their product by the dimension of the actual cooking surface! Your description is from outside rim to rim; the actual cooking surface is roughly 7 inches in what you describe as a 10.75 inch skillet! It’s a lot of $$$ for what you get!
Best pan I have ever used.
I was lucky enough to be gifted the carbon steel skillet, and it is hands down the best piece of cookware I have ever used. The pan heats up quickly, and retains that heat throughout cooking making sure whatever you are making gets cooked perfectly all the way through. I think cast iron/carbon steel tends to get labeled as a big bulky pan used to fry bacon, or over a camp fire but this pan is versatile enough to cook vegetables, eggs, or meat and it is not nearly as heavy/bulky as pans of the past tend to be. One of my favorite things to do with this pan is sear a tenderloin on both sides, then transfer the pan into the oven with some peppers and onions, and allow the meat to finish cooking in the oven. I also use the griddle which is grated on one side, and a flat top on the other, and the 4qt dutch oven. One thing that all 3 items I have from Marquette Castings has in common is the top notch quality of the product. If you are looking for a gift idea for the cook in your family, I highly recommend starting with this pan.
Grilled salmon perfectly and was easy to clean unlike a grill pan I have been using. I would also buy a larger size but am afraid I wouldn't be able to lift it.

Great Working Skillet - Use It!
No bones about it, I use this skillet like crazy and it is fabulous. Quickly took over from all my odds and ends and stainless steel skillets. I use it for high temp searing and glaze carmelizing, and all around fast cooking and slow simmering. It cleans super easy and keeps a season better than cast iron. can’t say enough and all mr cook friends want one. Never heard of carbon steel before getting it, but I will get every size they make. Very good product Marquette! Don’t hold back on this skillet - it can take heavy use and hard cleaning.
